Green Lemonade

I consistently seek alternatives, hacks and improvements to smoothies. Not that I intend to or recommend getting rid of them entirely because they are a great breakfast on the go and a perfect snack anytime. However, multiple fruits which most smoothie recipes call for add up to lots of sugar and on amount of super-foods added can change that.

My job is to find ways to entice people away from soda, energy drinks and “fruit water” which are anything but. Usually that means adding something green to whatever drink I am making frozen, liquid or creamy.

Lemon is a perfect balance to green. In fact,where I buy my wheatgrass they offer a lemon wedge to “cut the green” and adding it to “all-green” detox drinks really takes the “icky” taste away.

It’s a bit of a cheat but putting together lemonade with spinach adds vitamins K, A, C and folic acid into a drink that makes you think anything-but-healthy, except for the color which is very green. Spinach helps to build healthy bones, teeth, eyes and blood and can prevent colds. Being that this is the beginning of the Fall/Winter season on the east coast, help avoiding a cold is welcome and even more so with a refreshing lemony taste at 80 calories a serving. Enjoy!

Green Lemonade
Serves 6

Ingredients

  • 1 Fresh Lemon
  • ½ cup Lemon Juice
  • 5 medium Fresh Spinach Leaves
  • 7 cups of Spring Water
  • ½ cup of Agave Nectar

Procedure

  1. Pare away lemon rind with a paring knife until all the pith and peel is removed.
  2. Place all ingredients into a blender and blend on high until everything is mixed and there is no sight of leaves or lemon pulp.

Note: Because of the high powered nature of a Vitamix blender a foam was created on the top. just scoop it off. Another method is to pour the lemonade into a dispenser and cover with the dispenser top then pound lightly on the top until some of the foam goes away due to the air.
